     While thinking about making a cheese plate recently, I needed to come up with a few quick condiments to go along with the cheeses.  I immediately began to think about the truffle honey I enjoyed so much in Italy, but I'm unfortunately out of it and haven't tracked down replacements for the pantry.

And now a Bee-t about honeybees

   Honeybees probably originated some forty million years ago in Africa spreading from southern Africa to Europe and Asia. They were brought into the Americas by entrepreneurial settlers in the early 17 century.
In 1956, a few laboratory swarms of African bees were released into the Brazilian wild, by accident. Initially, there were a few fatal incidents, until the beekeepers quickly learnt how to handle the African bee. Today Brazil and a few other Latin American countries have a thriving beekeeping industry. The African bee mated with the local bee and a new name was coined for the species – the Africanized bee.

Pollen

    Male cells of flowers, responsible for the reproduction of plants, are called pollen. Flowers are the very special part of a plant as they provide multifaceted roles ( eg. Bach flower remedies). Nature, as well as providing for the perpetuity of plants, also provides the protein source for honeybee nutrition. It could be said that without pollen, there would be no honeybee colonies, no wax, no royal jelly and no brood.

Propolis

The word “propolis” comes from two Greek words:”pro” which means “before” and “polis” which means “city”. Very simply said, propolis is the material made by bees to protect their home and the brood. Little wonder that it is called “Russian penicillin”
Bees collect propolis from various plant sources, and then mix the original plant resin with beeswax and beta-glucosidase which they secrete during propolis collection. The colour and fragrance of the raw material depend directly on the plant sources that the bees use and the mixture of the material collected.

Most honey sold today has been commercially processed, resulting in enzymes (which help digestion) and vitamins, being destroyed and protein (pollen) being removed. This processing involves heating and filtering through a cloth or fine filter paper. The end product will remain in a liquid state for a long period of time. When most processed honey granulates, crystals begin to form at the bottom of the jar, moving upwards (a sure sign of refined and processed product, despite the label “Pure” Honey).

How Effective Is Honey In Treating Resistant Wounds?

Can the ancient remedy of honey make an impact in treating wounds that are resistant to traditional antibiotics? Two articles, published recently in Ostomy Wound Management and in the Journal of Applied Microbiology, suggest honey may show some promise in wound healing.
The Journal of Applied Microbiology study involved 18 strains of MRSA and seven strains of vancomycin-sensitive enterococci (VSE), which were isolated from infected wounds. Researchers established their sensitivity to two natural honeys of median levels of antibacterial activity and compared that with an artificial honey solution.

     Honey is an ancient wound remedy that is reappearing in clinical practice in developed countries. The availability of licensed wound care products in Europe, New Zealand and Australia is prompting healthcare practitioners in conventional medicine to consider the use of honey within their treatment armamentarium. Ulcer remedies such as honey are necessary as the prevalence of diabetes rises.
     The American Diabetes Association has estimated that about 7 percent of the population had diabetes.1 It is an increasing problem that has serious implications and a high degree of morbidity. In 2005, 1.5 million new cases in the U.S. were diagnosed in people over 20 years of age.
     Foot ulcers are a frequent and complex complication in diabetes and researchers have estimated the prevalence of foot ulceration in this population to be approximately 6 percent.2 Diabetic foot ulcers are often present for long periods of time and have poor healing rates.3 These poor healing rates lead to the worst case scenario — amputation — and diabetes remains the most common cause of lower extremity amputation in the Western world.

       Extracted the first lot of honey and it was fairly labour intensive. Would love an extractor, but can't justify the cost. However the next extraction, due this week should be better, this time I'll have my technique down pat. The taste of the unfiltered honey is exquisite and with all the local pollen in it I hope it assists with inoculation and my hayfever is 'organically' treated. As the bees have been on apple blossom for some time I like to think it tastes like it. Though I've never chewed on blossoms it has a really light sweet taste that's great in tea, in bread, on bread, on just about anything come to mention it.
